Question by Courtney: how do you make lima beans on the stove?
Just regular lima beans. I added 6 cups of water & letting it simmer right now, but what else is needed in it besides water, salt, and pepper?
what makes the juice? the water?

Nothing else is needed unless you eat meat, and you could add half a piece of bacon when they are almost done.

If you haven’t salted them yet, don’t. That’s a rule of thumb when cooking any legume, because salt in the cooking water can make the beans “seize”, which means they stop getting tender after a certain point. Beans should always be salted when fully cooked.
I make a lima bean casserole sometimes by cooking the lima beans with onion and bellpepper, minced, w/ a bit of garlic. When the beans are done, I tip them into a casserole and top with browned sausage – kielbasa, andouille, whatever. I bake them in the oven for an hour more, uncovered, and they are fabulous. For a side dish, however, I’d just cook them off with a little diced onion, maybe some bacon or salt pork rendered if you have it. Also if you hold some Lima beans out (like a cupful or two) you’re well on your way to succotash, made by sauteeing drained beans with some onion, adding fresh-cut or frozen corn and a bit of pimiento and butter and letting cook until tender. Finish w/ just a splash of milk or cream; not enough to make it liquidy, but to make it almost creamy.

Here is a great recipe:
Easy Lima Beans
Yields: 6 servings
Baby lima beans are steamed in chicken broth. This is a very tasty lima bean recipe that is also low in fat.
cooking spray
1/2 medium onion, finely chopped 1 1/2 cups chicken broth
1 (16 ounce) package frozen baby lima beans
Heat a large saucepan over medium heat, & spray with cooking spray. Sauté onions until soft & translucent. Pour in chicken broth, & bring to a boil. Add lima beans, & enough water just to cover.
Bring to a boil, then reduce heat to low, cover, & simmer for 30 minutes, until beans are tender.
